It's been said that we just don't recognize the significant moments in our lives while they're happening. We grow complacent with ideas, or things or people and we take them for granted and it's usually not until that thing is about to be taken away from us that we realize how much we need it, how much we love it.

heartbaking!

Immensely satisfying.

nutty but nice.

I got this lovely recipe of STRAWBERRY & CHOCOLATE SQUARES from a good recipe book that I bought recently and I needed to do something lively on a boring Tuesday. So, I thought of hitting our kitchen right away and settled on baking squares that’s definitely a perfect match for an afternoon coffee or tea. It’s somewhat out of the ordinary unlike my Chocolate Chip Oatie Cookies. However, it’s the easiest & quickest to make that is why I love baking them again and again. This new recipe just took about 45 minutes of my time. Very simple yet I surely enjoyed its taste. The blend of strawberry & chocolate in between makes it just right for my sweet tooth.

STRAWBERRY & CHOCOLATE SQUARES

Makes 16

225 g plain flour
1 tsp baking powder
100 g caster sugar
85 g soft brown sugar
225 g unsalted butter
150 g porridge oats
225 g strawberry jam
100 g plain chocolate chips
25 g chopped almonds

Preheat the oven to 375 degrees F. Grease a deep-sided tin with butter or margarine. Sieve the flour and baking powder into a large bowl. Add the caster sugar and brown sugar to the flour and mix well. Add the butter and rub in until the mixture resembles breadcrumbs. Stir in the oats. Press three-quarters of the mixture into the base of the prepared cake tin. Bake in the preheated oven for 10 minutes. Spread the jam over the cooked base and sprinkle over the chocolate chips. Mix the remaining flour mixture with almonds. Drop evenly over the chocolate chips and press down gently. Return to the oven and bake for a further 25-30 minutes until golden brown. Remove from the oven. Leave to cool in the tin then cut into squares.
