It's been said that we just don't recognize the significant moments in our lives while they're happening. We grow complacent with ideas, or things or people and we take them for granted and it's usually not until that thing is about to be taken away from us that we realize how much we need it, how much we love it.

We are indeed much more than what we eat but what we eat can nevertheless help us to be much more than what we are.

I love being at our kitchen, it makes me happy!

So, here’s another dull Tuesday for me.

I came across to this uncomplicated recipe of BANANA CHOCOLATE CHIP MUFFINS over the internet and simply took pleasure from trying to bake them. Fortunately, it turned out pretty well except that it looked like a cupcake. :)

Ingredients:

1/2 cup butter or margarine, softened
1/2 cup sugar
1/2 cup packed brown sugar
2 eggs
1 1/2 cups mashed ripe bananas
3 teaspoons vanilla extract
2 cups all-purpose flour
3 teaspoons baking soda
1 cup chopped walnuts
1 cup semisweet chocolate chips

Makes 24

Directions:

In a mixing bowl, cream butter and sugars. Beat in eggs, bananas and vanilla. Combine flour and baking soda; add to creamed mixture just until combined. Stir in the walnuts and chocolate chips. Fill greased or paper-lined muffin cups half full. Bake at 350 degrees F for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

Don’t wreck a sublime cupcake experience by feeling guilty.
